What is a "Peaberry" you might ask?
Peaberry coffee is a unique natural mutation that occurs within the coffee cherry, representing roughly 5% to 10% of any given harvest. While a standard coffee cherry contains two flat-sided seeds (beans) facing each other, a peaberry develops when only one of the two ovules is fertilized. This results in a single, small, oval bean that is shaped like a pea—hence the name.
Why It’s Special
Because the plant focuses all its energy and nutrients into one seed instead of two, many enthusiasts believe peaberries possess a more concentrated flavor profile. You will often find they have a higher acidity, lighter body, and more complex aromatic notes compared to standard beans from the same crop.
Processing and Roasting
Peaberries are labor-intensive. They must be meticulously sorted by hand or using specialized sieves after harvesting. Roasting them is also a distinct craft:
